St. Moses Crockpot Lamb Roast

Ingredients

  • 2 lb lamb
  • 3 potatoes
  • 1 onion
  • 2-3 carrots
  • 1 C white wine
  • 1 C chicken broth
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic
  • 1-2 sprigs rosemary

Instructions

  • Preheat a skillet to medium-high heat and roughly chop the potatoes, onion, and carrots.
  • Place the vegetables in the bottom of a crockpot along with the wine and broth.
  • Once the skillet is hot, sear the lamb on all sides and place on top of the vegetables, then sprinkle the salt, pepper, garlic and rosemary sprigs on top of the lamb.
  • Secure the crockpot lid and cook on low for 8 hours. Serve over rice or mashed potatoes.
