History
All of the scriptures tell of our salvation. What was lost is found; what was in bondage is set free. This is the story of Jesus’ death and resurrection for the life of the world, and it is the story of Moses leading the people of Israel out of Egypt: the Lord saves his people. In fact, these two stories are so related and intertwined that the feast of our Lord’s resurrection is known as “Pascha” in nearly every tongue but our own. It is a word that is derived from the Hebrew word for Passover, the meal that the Israelites consumed while the Angel of Death passed over them and observed every year thereafter as a remembrance.
In the New Testament, Paul explains that Christ himself is our Passover lamb who was sacrificed for our salvation (1 Cor. 5:7), and today we feast on him in his Holy Supper. Naturally, lamb is a fitting dish for the feast of Easter, or Pascha. Likewise, the commemoration of Moses is one more time during the year when we might choose to have lamb, a meal by which we celebrate and remember the man through whom God chose to work in this Old Testament salvation story.
Crockpot Lamb Roast
Assemble this meal in the morning, and when dinner time comes you will have a mouth-watering, tender roast that uses the nutritious vegetables that are coming into season. Enjoy the warmth and comfort of a special home-cooked meal and a great excuse to serve lamb in commemoration of St. Moses.
Ingredients
2 pounds lamb
3 potatoes
1 onion
2-3 carrots
1 cup white wine
1 cup chicken broth
1 tsp salt
1 tsp pepper
1 tsp garlic
1-2 sprigs rosemary
Instructions
- Preheat a skillet to medium-high heat and roughly chop the potatoes, onion, and carrots.
- Place the vegetables in the bottom of a crockpot along with the wine and broth.
- Once the skillet is hot, sear the lamb on all sides and place on top of the vegetables, then sprinkle the salt, pepper, garlic and rosemary sprigs on top of the lamb.
- Secure the crockpot lid and cook on low for 8 hours. Serve over rice or mashed potatoes.
St. Moses Crockpot Lamb Roast
