History
St. Justin Martyr was born around AD 100. And while he was born in Samaria, his heritage was truly Greek. In addition to learning more about this saint’s life and perhaps even reading some of his translated works, we suggest tossing together a Greek salad in commemoration of this Greek saint!
Greek Salad
The beauty of a Greek salad is its versatility and ability to be thrown together in mere minutes—not to mention how wonderfully refreshing it is! The base of the salad is made up of tomatoes, red onion, cucumber, and feta cheese. Then, add in your items of choice. The lettuce is even optional if you want a more pared-down cucumber-tomato salad, but we chose to add it in here to bulk it up so it could feed a few more people. Other options include avocado, olives, garbanzo beans, and fresh herbs of your choosing.
Chop all ingredients, toss together and enjoy! You can then eat the salad plain or top it with a vinaigrette of your choosing like the one we recently shared for Rogate Sunday, which would make a perfect topping to this salad and add an extra zing!
Ingredients
2 cups romaine lettuce chopped
1 cup cherry tomatoes quartered
1 red onion chopped
1 cucumber
1 cup feta cheese
1 tablespoon dill
1 avocado, optional
½ cup olives, optional
Instructions
- Chop all of the vegetables and toss with feta cheese and fresh dill. Drizzle with a vinaigrette of your choosing. Enjoy!
